Gluten Free Pasta Fagioli Soup

Sometimes one of the easiest ways to feed our family is to make a big batch of soup! I love meals where the protein, carb, and veggie are all together in one dish, and you don’t have to do much in the way of sides.

One thing I particularly love about this recipe is that I’ve been able to customize it for all sorts of diets. I have family members and friends who are vegetarian where I replace the chicken stock with vegetable stock, and simply do a separate batch without the sausage, or cook the sausage separately and let the meat eaters add it in. I stopped making anything with pasta separately for gluten free vs. glutenful family members, as the gluten free pasta these days tastes and has a texture that is pretty much the same!

Things I do to customize are as follows:

  • I typically use the pork sausage we get from our Butcher Box. If none on hand I use turkey or chicken sausage in casings as mentioned in this recipe.
  • I prefer to purchase Fire Roasted tomatoes for this recipe over regular diced tomatoes. Gives an extra smoky flavor that blends well.
  • We use gluten free noodles, obviously ;) We also mix it up and use whatever shape of pasta we have on hand. Spaghetti, Penne, Rotini – we’ve done it all! If using Spaghetti, I often break it in half.
  • For a Vegetarian version you can replace the chicken broth with vegetable broth, and leave out sausage; you can do 2 pots side by side with sausage in one, or keep the sausage separate entirely and have the meat eaters add the sausage in themselves
  • For dairy free, simply don’t garnish with parmesean cheese, or use a dairy free cheese

Easy gluten free sides for this soup are Brazi Bites, gluten free garlic toast, or your favorite gluten free crackers with cheese! If the soup doesn’t have enough veggies for you as is, a simple side salad can also pair well, especially if serving in the summer. Bon Appetit!
